1. Slice chicken into strips (or better yet, buy chicken that is already cut in strips). Marinate in Lawry's Mesquite Lime marinade. Place chicken and marinade in a large zip-lock baggie, shake, and put in fridge for at least thirty minutes (2 hours is ideal).
2. Slice vegetables in strips (red and green bell pepper, onion).
3. Cook chicken on a grill or in a skillet for approx. 10 minutes. Add extra marinade as necessary.
4. Cook vegetables in a skillet. Saute in beer (any kind) and a small amount of mesquite lime marinade. Turn frequently until vegetables are soft.
5. Heat tortillas and put sour cream, salsa, cheese, lettuce, sliced tomatoes, and guacamole in small bowls.
Serve all buffet style.
Margaritas, mexican rice, chips & salsa, and 7-layer dip are nice
accompaniments!
