Garlic Mashed Potatoes (serves 4)

2 lbs of new potatoes (unpeeled & cut into large dice)
1 tbs unsalted butter
4-5 garlic cloves (crushed)
2 cu heavy cream
1 tsp kosher salt
1/2 tsp black pepper

cook potatoes in a large pot filled with cold water - bring water to a boil and reduce heat to medium until the potatoes are tender (approx 15 min.)  Drain and mash potatoes

Melt butter in a small skillet over medium-heat.  Add garlic and cook until the garlic is golden (2-3min).  Add cream and cook until the mixture is halved (7min).

Add the garlic cream, salt & pepper to the potatotes and mix well!
